The Story Behind Fat Cat Bakery Galveston
What started as a small pizza restaurant in a little town in Baja California Sur, Mexico, eventually became Fat Cat Bakery in Galveston, Texas.
The story of Fat Cat is a story of food, family, hard work, and one very special cinnamon roll.
It All Started in Mulegé, Mexico
The Fat Cat story began in 2014 in Mulegé, Baja California Sur, Mexico, where Laura and Robert opened Gato Gordo Pizza.
It was there, in the small coastal town of Mulegé, that the recipe for what would eventually become our famous Fat Cat Cinnamon Roll was created.
What started as something special for our customers quickly became a favorite. We knew we had something worth sharing, and the cinnamon roll became an important part of the Fat Cat story.
Fat Cat Pancake House & Bakery
In 2017, Laura and Robert opened Fat Cat Pancake House & Bakery in Rosarito, Baja California, Mexico, where we continued developing our food and growing our relationship with our customers.
Our signature cinnamon roll became a featured item at Fat Cat Pancake House & Bakery. Over the years, it became one of the products people came back for again and again.
The cinnamon roll that was born years earlier in Mulegé had officially become part of the Fat Cat tradition.
Bringing Fat Cat to Texas
In 2025, Laura and Robert began taking Fat Cat on the road, participating in events throughout the Houston area.
Working events gave us the opportunity to introduce our food and our cinnamon rolls to even more people. For about a year, we worked events, met new customers, listened to their feedback, and continued building the Fat Cat brand.
That experience helped lead us to our next big chapter.
Fat Cat Bakery Galveston
In May 2026, Fat Cat Bakery opened its doors in Galveston, Texas, bringing our story to the island.
Located on Seawall Boulevard, Fat Cat Bakery is where our history, recipes, and love of baking come together.
Today, we proudly serve Galveston with fresh cinnamon rolls, custom cakes, specialty baked goods, and more. From our signature cinnamon rolls to custom cakes created for birthdays, weddings, and special celebrations, we love making food that gives people something to remember.
From Mulegé to Galveston
Our journey has taken us from Mulegé, Mexico, to Fat Cat Pancake House & Bakery, through events in the Houston area, and finally to our bakery on Seawall Boulevard in Galveston.
Through every location and every chapter, one thing has stayed the same: our commitment to making great food and creating something our customers love.
The cinnamon roll that started it all in 2014 is still at the heart of Fat Cat today.
